Throw a Mum a Cocktail Party

If Mum loves a drink every now and then, throwing her a special cocktail party, serving up the best selections you know she’ll like is one activity that will surely be a winner.

The great thing about cocktail parties is that you can set it up just the way Mum likes it. Try out some fancy recipes, lay out her favourite fruits, cheese, cold cuts, and crackers, and that’ll be plenty enough to have a great time.

Oh, and don’t forget to make a playlist of Mum’s favourite songs to get the party going!

Rhubarb, Pomegranate, and Kombucha Punch

If Mum likes any of these three ingredients, this recipe is definitely worth the effort. This recipe serves 12, and is easy to make, but does require some time to cook.

What you need:

  • 2 bunches of rhubarb
  • ½ bunch of rhubarb thinly sliced
  • 2 teaspoon of vanilla bean paste
  • 175 grams of caster sugar
  • 1 cup of pomegranate molasses
  • 1 cup of water
  • Crushed ice
  • 1 ½ cup of Mum’s favourite gin 
  • 4 cups of original flavoured Kombucha 

Preheat the oven to 120°C and line a baking tray with parchment paper. Arrange the thinly sliced rhubarb, in a single layer, onto the parchment paper and roast for 1 hour 30 minutes, or until dehydrated but not browned. Remove to cool, then finely chop and set aside.

Roughly chop the 2 bunches of rhubarb, place in a saucepan on medium heat with the vanilla bean paste, sugar, and 1 cup of water. Cool for roughly 10 minutes, until the mixture becomes thick and syrupy.

Strain the mixture through a fine sieve into a bowl. Keep the purée from the sieve as well as the strainer rhubarb syrup. 

Divide the molasses among the glasses, and add a dollop of the rhubarb purée. Top the glass with ice. Combine the gin, kombucha, and rhubarb syrup into a jug and pour it into the glasses. 

Sprinkle the finely chopped dried rhubarb as garnish to serve.

Australiana Spritz Cocktail

If you don’t have much time to prep, here’s a quick cocktail that is literate a put together, and mix. Extremely easy to make, making one drink at a time.

The Australiana Spritz Cocktail is simply delicious, pretty to look at, and great to cool down on a hot, sunny day. This recipe is created by celebrity drinks consultant Cam Northway.

What you’ll need:

  • 20ml Archie Rose Signature Dry Gin
  • 20ml Regal Rogue Lively White Vermouth
  • 30ml chilled Prosecco
  • 60ml soda water
  • 2 lime wedges
  • 1 rosemary sprig 

Mix the gin, vermouth, Prosecco, and soda water in a large cocktail glass and gently stir. Fill it with ice.

Squeeze the lime and place the rosemary sprig into the drink. Not only will you get a fresh citrus burst, but the hint of herb.

Aperol Spritz Slushie 

If you’re looking to cool down and have a thirst quencher, you’ll definitely want to whip this drink up. 

What you’ll need: 

  • An orange
  • 300ml Aperol
  • 600ml chilled Prosecco
  • 200ml soda water
  • Bay leaves to garnish 

Another one that requires a fair bit of time to prepare, this Aperol Spritz slushy is certainly worth the effort. A quick prep time of only 10 mins with a much more time-intensive demand of an hour and a half to cook the orange. 

Place the orange in a saucepan, and submerge it in cold water. Bring the water to boil on medium heat, and cook for 1 hour 30 minutes, or until the orange is very soft.

Cool the orange completely, and then transfer to a blender to blitz until puréed. Strain the purée through a sieve into a bowl, and line your glasses with the orange purée. 

Fill the blender with ice, add the Aperol, and blend until smooth and slushy. Spoon the mixture into the glasses, and top with Prosecco and soda water, followed by bay leaves to garnish and serve.
